Create a Delicious Brunch Item for Mom

Many people want to cook something special for their mothers on Mother's Day, but don't know where to begin. Showing Mom your appreciation doesn't require a lot of know-how in the kitchen, nor a gourmet, four-course meal. Simple fare, such as items that can be enjoyed for a brunch or light lunch, will certainly fit the bill.
Quiches often are a one-bowl creation that do not take a lot of time or ingredients to create. You can vary the ingredients to cater to Mom's palate.
For a refreshing and easy summertime quiche, try this Zucchini Quiche for Mother's Day or entertaining throughout the summer season.
Zucchini Quiche
Makes 6 to 8 slices
3 cups unpeeled zucchini squash chopped into bite-size pieces
4 eggs, beaten
1/2 cup grated parmesan cheese
1/2 cup vegetable oil
1 medium-size onion, chopped into small pieces
1 cup pancake mix, such as Bisquick brand
Salt and pepper to taste
- Preheat oven to 350 F.
- Mix all ingredients in a bowl except for the zucchini.
- Add the zucchini to the batter and toss to coat.
- Pour the batter into a 9-inch glass pie plate.
- Bake for about 40 minutes, or until top is golden brown.
- Serve slices warm with a side salad.
